Soy Inks and Color

I am looking for any information anyone may have concerning color reproduction using soy based inks (or any water based vegetable inks.)

1. How does the color on press compare their standard house inks?

2. How are you proofing a job that is soy based inks? (Considering most all proofing system in any operation are set up for the assumed use of standard inks.)

And I am talking about high-end critical color jobs.

All the inks I use from Superior are soy (vegetable) based and run fine. We match our HP5000 an no one has complained.
