Yeah, the Anchor Bar is downtown, and where Wings were first created (neat story behind it, too). The best tasting wings however, are at Duff's out in Amherst (half hour from downtown?) Definitely watch how you order them there.. Hot, really is, HOT! There's lots of other good eats and stuff, but... you can only eat so many meals a day.
Niagara easily takes a day or two, so don't discount it. Aside from the more touristy attractions, a walk in the gorge is fantastic if you're into nature and hiking. Lots to do walking, so hope for good weather. The Canadian side also has lots of good attractions.. the butterfly conservatory is worth an hour or two, too. There's also the Shaw festival up near Niagara on the Lake, which can easily occupy a day in itself. Some other theatres, Shakespere in the Park used to go on behind the Museum in Buffalo, which may also be worth looking at if you're into Art - The Albright Knox Art Museum has a handful of famous works. Last time I was there they had a Chilluly exhibit that was fantastic!
There's some good shopping, and yes, the Sabre's are in the playoff's.... dunno if they'll still be playing in May. Maybe plan on taking in a ball game at Pilot Field (or DunnTire Park... whoever the damned sponsor is this week  ). If this is your first time in America, definitely stop to take in a baseball game. Personally, I can't stand the sport, but there truly is something magical about going to ball game, getting a hot-dog and a cold beer, maybe your kids will catch a fly ball? The minor league parks are a far better family-friendly atmosphere than the major league's, anyways (not to mention affordable).
If you've got friends/family in the area, I'm sure they can get more specific, but if you're really in a pinch, shoot me a PM, and I'll give you my eMail for when you're over here.
