I don't think it can be done 100% of the time without problems. This
assumes that you're doing this to retain editability of vector elements
in InDesign. There seem to be too many features of Illy that aren't
included in ID. Otherwise Placing would be the way to go, IMO.

Mabey I'm just uneducated though.

Setting yourself up for problems and just a sign of laziness IMO.

What happens when you need to make a change to the copy/pasted element (changing a spot to 4C for example) and you forgot or didnt include the actual eps file with the support? What if theres a change in text if the element contains any?

I agree with seemtotype, it doesnt work 100% of the time. Ive had overprint issues on files before with clients doing a copy/paste.

We've been getting files lately with copy/pasted elements. They get kicked right back to the client unless they can provide the actual support.

The key statement there is ?without problems?. I have layout people who are copy and pasting all of their graphic elements from IL to ID. Most of them do work fine. There is an issue with the occasional oversize bounding boxes.
The biggest problem is with the elements with embedded bit map images that cause a problem. When I backtrack these I usually find that the layout person has created an image in Photoshop, then copy and pasted it into her open IL file, then pasted the IL image into ID. What she didn?t do was save the Photoshop file. What I want her to do is save the Photoshop image and place that into ID. (I understand that it is just too much trouble to keep up with all those ?extra? files.)

I just happened to be battling one of these files on Monday. The whole thing had copy & pasted objects from Illy. Ripping the file would generate a rangecheck;shfill postscript error. Would also get the same error using distiller as well. I suspect this would be gradient information that just so happens not to show up in gradients palette. Exporting as a pdf would work but there were anomalies in the pdf like segments of certain vectors losing the fill color or being a different color altogether. I think some of these had a spot color fill but didn't show up in the swatch palette (as well) since I converted everything to process.
One other thing I did notice is certain vector objects had tiny hairlines between them. Unless the Illy file was built that way (which I doubt), it looked as if you lose some precision when you copy and paste.
I got it to finally work by using a transparency flattening mask technique and forced all these vectors to rasterize. I also left the hairlines as is. Screw that. I spent enough time trying to get it to work. Thats what they get for trying to cut corners.

I guarantee you copying & pasting is not 100% and like SyTySyndicate said, it's a sign of laziness. Tell your customers to avoid doing it.
