believe it or not, I had this exact thing happen to me on my Mac at home.
When it was installed, something happened to some of the support files used by Illy. I ended up hacking into the app itself and replaced the entire folder called "frameworks" from another copy of Illy.
****WARNING!!! HACK ALERT*****
****PROCEED AT YOUR OWN RISK****
Here's how I fixed mine:
First go to your Utilities folder and launch Console.
I can't remember which, but check the console log or system log and see what pops up when you try to launch Illustrator. It should mention something about not finding or a corrupt frameworks file.
If it does, do the following:
navigate to you applications folder/Illustrator folder and right mouse click on the application itself.
Click on "show package contents"
Inside this you will see a folder called frameworks.
If you have a working app, go to that one and copy the frameworks folder from there and take that and replace the one in the non working app.
proceed at your own risk, worse case scenario, you hosed a non-working app. You may have a bad Install DVD.
