Colour conversion

I have recently upgraded to Pitstop 7, running CS on Mac G5. We only do newspaper work and I receive a lot of PDF files that need to be check for RGB, fonts etc. However I am having trouble setting up color management to achieve the results I get when converting in Photoshop (which I have set up in separation set-up).
