Artificial Bolds and Italics are not embedded in a PDF as far as I'm aware.
I.e. if the true bold/italics version of the font is missing, the roman version will be embedded (or from some applications "courier" will be used as a replacement font).
You can check font properties with the use of the Text Touch-up tool (properties) in Acrobat, alternatively use Enfocus PitStop's text tool to highlight text and view properties (use the inspector palette for this).
If you compare the font settings for both PDF, I'm sure you'll find that the one with Bold and Italics is actually pointing to a "true" font, not an artificial style.
