Converting Spot to Process in Acrobat

Using Acrobat 7 Pro, have a PDF with Spot Colors Built in. When I go to the Output Preview, It shows CMYK as well as the 2 process colors that are listed, when looking at the color in solids, it recognizes them to be a pantone color. When I do a convert all spots to process, it does it at the time I ask, but when I Do a Save, or a Save As, and then reopen the document, It reverts to the way it was with the spot colors still there, what am I doing Wrong??
