We use Oris Tuner 5.1
Launch Color Tuner, and in the Color menu, drag down to Spot color Corrections.
It will open a window, select the color you want to edit, and click "change".
On the right side of this window is the CMYK values for that color, change those to what you need and click Save.

you should be good to go.
