I've not used Oris, but I understand it is very similar to GMG in the way it operates. You likely have a Spot Colot database that performs calculation independent of the CMYK profiling part of the system. It should have a entry for Pantone 300 C that has target color values in Lab, measure values in Lab and perhaps shows the rulsting CMYK values the printer will receive. To dial in color, your would measure your sample with a spectrophotometer and enter the Lab values into the database, where the software would recalculate the ideal values to send to the printer. Its an iterative cycle, so you might have to print, measure and repeat a few times to dial it down to an acceptable color match.
Of course, some pantone colors are simply out of the gamut of the printer and can only be adjusted so far.
