I can't select paper size, or anything - just says 'defined by driver' like it's not seeing it at all.

You will need to go to the utilities/PPD manager in Quark to make sure it is looking in the right spot and has seen the driver. There should be a check mark next to it if it has found it, to show that it is loaded and activated.
When it is recognized, it should give you all the supported paper sizes you need, not just the "defined by driver" crap.
